Spicy stir fried prawn...

Who doesn't love a quick recipe? I always prefer a quick delicious dish for a weeknight dinner. And I choose fish or seafood for that, as the cooking time is much less compared to other proteins. Last week I tried this quick, easy, ready in a jiffy spicy stir fried prawns to go with some steamed rice. The spicy prawns were perfect to go with both stir fried noodles and plain rice.

Batabi lebu makha...

Batabi lebu known as pomelo in English is a citrus fruit with a thick green outer covering. The pulp inside may be yellowish white or pink in color, when ripe tastes sweet. But some may taste sour and bitter. This vitamin C rich citrus fruit is loaded with goodness. It's good for our skin, hair, as well the high potassium content is good for the heart too. This anti-oxidant rich fruit is great for fighting urinary tract infection. One can eat the pulp of the fruit directly or fresh juice can be prepared.

Baby potatoes with coriander pesto...

With the heat index increasing everyday it's exhausting to be in the kitchen for longer duration to prepare elaborate dishes. Simple rice, lentils, thin fish curries are what I'm making mostly these days. Other than lunch and dinner, the lunch boxes for school and office require a good planning. With the kid enrolled in a morning school I hardly have 30-40 mins to prepare for the boxes. So I plan accordingly and make myself ready with half the work done before hand. Today I'm going to share one of such recipes, that I prepare for my kid's lunch box. A very easy and quick recipe, which not only great for lunch boxes but also as a starter for your next party.

Postor Bora..


What is food? something we take when we feel hungry? or something we can't resist even if we are full? or as my nine year old is prompting me " Ma, food is something we need to take for growth and energy" (her science class influence of course).

I think food is beyond and above all these definitions. It's not only calms down the hungry rat rumbling inside our stomach but much more than that. Food is something that satisfies our soul, it's a memory that lingers throughout our life, a taste from childhood, an aroma that triggers thousands emotions, that evokes the memory of someone very close to you, making them and the moment immortal.

My Soba noodle bowl and passion of photography...

This post is going to be a bit different than my other posts. This will be more about my passion for food photography than the usual recipe posts I share. Don't worry, there is a recipe at the end,but I would like to call this one 'The monologue of a self taught food photographer'.

For last few weeks I was planning to add some movement, action and human touch to my food photos. But planning and execution are two different things, specially for a self taught photographer like me.

Whatever knowledge I have gathered about food photography is because of my food blog. During the course of shooting the food I cook, I have managed to understand and learn different aspects of food photography and there is so much yet to learn.

For me experimenting with the camera is the best way to learn. And I enjoy it immensely. I feel super enthusiastic about trying anything new, it gives me a rush, it is like a quest to do something I haven't done earlier.

While looking at a food photo, I  am always intrigued to get a feel of the story in it. Being a hardcore foodie and food lover, I think incorporating sense of movements like mixing the batter, or pouring sauce or holding a bowl of soup in a food photo brings out an emotion, it tells a story and that is what I love and want to share. I have shot a few like that previously, but all were very amateurish and I find them awful when I see those images now.

I am my worse critic, and I compare myself with the past me. The images I have taken earlier and now shows me it is an evolving process for a self taught food photographer. Photography in general needs planning and lots of trial. Sometimes it's frustrating but "never give up" is the mantra and above all enjoying your work is the fuel to keep on going. So I placed the camera on tripod, arranged a glass, a bottle and some orange juice and started. Today I'm sharing a simple everyday dish from my kitchen. Lentil or dal is a staple in every Indian kitchen. We Indians eat various kind of lentils and legumes. I personally like red lentil a lot. Apart from red lentil takes very little time to cook, it is tasty, high in nutrition and low in calorie.

Black eyed bean salad and my submission for BWW#118

Few days back while cleaning the pantry shelves I found these black eyed beans. I'm not a big fan of these beans. Once in a while I use them to make mixed dal. But for some reason looking at the half filled jar of these black and white beans, I found them very interesting and clicked some pics of these not so loved beans. And to be honest whatever the bean may taste like, I found them to be very camera friendly and photogenic. The first shot  below was clicked in daylight, using a Nikon D600 and 105mm lens. I used a homemade reflector (aluminium foil wrapped over a hard board) to lit up the front.


After I clicked the first one I thought of changing the mood of the pic and placed a black cloth as a background, the second image appeared very dramatic. I changed the saturation of the second pic to make it black and white, the following image is my submission for Black and White Wednesday event. Black eyed beans are called lobia in India. I remember my mother used to cook a simple dish with these beans. But I was never fond of that curry. I made a quick and healthy salad. You can have this as a healthy lunch or serve with crackers as a snack.


It is a very easy and quick salad. Either you can use dried beans or canned beans. If you are using dried beans, them soak them overnight in enough water. Rinse well and cook before making the salad or any other dishes. I used simple ingredients, onion, tomato, cucumber etc for the salad. And made an easy vinaigrette flavored with parsley and garlic.


Things needed to make Black eyed beans salad:

  • Cooked or canned black eyed beans: 1 cup
  • Red onion (diced): 1/4 cup
  • Tomato/ cherry tomato: 1/3 cup
  • Cucumber (diced): 1/3 cup
  • EVOO: 3 tbsp
  • Apple cider vinegar: 1 tbsp
  • Garlic (minced): 1 tsp
  • Parsley: 1 tsp
  • Honey: 1/2 tbsp
  • Chili flakes: 1-2 tsp
  • Black pepper powder to taste
  • Salt to taste
  • Feta cheese (optional)
  • Crackers to serve (optional)


Steps of making Black eyed beans salad:

1. If you are using canned black eyed beans, then drain and keep the beans aside. If you are using dried beans, then the beans are need to be soaked in enough water for atleast 8 hrs or over night. After proper soaking drain and wash the beans and cook. This cooked beans can be used in various ways.

2. In a bowl add EVOO, vinegar, honey, chili flakes, salt, black pepper, parsley, garlic, mix well. Add cooked beans and other ingredients, mix well. Serve immediately.

I used dried parsley, you can use fresh, in that case increase the amount to 1 tablespoon. I used cheery tomato, you can use any of your choice.

Serving suggestion: Sprinkle feta cheese on the salad and serve with some multi-grain cracker.

Quick n easy cake for Christmas...


What I love about any festival is the festive mood, the preparation for it, the feeling of something very special is going to happen. I always found the days  of waiting for a festival the most exciting part. Christmas is not an exception. Making the wish list, buying gifts for my little one, expecting a surprise, discussing about food with friends, decorating the tree and above all baking cakes and cookies.

I bake several different cakes during this time, but a special Christmas cake is a must. Though I do not like the long elaborate process of soaking dry fruits with alcohol, then baking the cake and again brushing it with alcohol. I found it easier to bake a cake that taste exactly like a Christmas cake but can be baked just the day before Christmas.

This quick and easy Christmas cake has a dense, moist texture, with loads of candied cherries and orange peels. I used store bought tutti frutti, you can always make your own. I did not use any alcohol in this cake, but you can add rum or brandy to flavor the cake, or else add imitation rum flavor to bring the boozy essence. You can add nuts, raisins of your choice. It is a versatile recipe, you can customize as per your choice. 


Things needed to make the Christmas cake:


  • All purpose flour: 1 and 3/4 cup
  • Eggs: 4
  • Brown sugar: 1 cup
  • White sugar: 3/4 cup
  • Salt: 1 tsp*
  • Baking powder: 1 tsp
  • Unsalted butter: 1 stick (113 gm)
  • Vanilla extract: 1 tsp
  • Orange extract: 1/2 tsp
  • Tutti frutti mix: 1 cup
  • Cinnamon powder: 1/4 tsp
  • Nutmeg powder: 1/8 tsp
  • Extra butter and flour to prepare the pan
  • Rum or brandy to brush the cake (optional)
*If you are using salted butter, no need to add salt.

Steps of making the Christmas cake:

1. Pre-heat oven to 375F.

2. Grease a 9 inch loaf pan or 9 inch round pan with butter and dust with flour, keep aside

1. Sieve together all purpose flour, salt, baking powder, cinnamon powder and nutmeg powder. Keep aside.

2. Cream the butter for 3-4 min. Add brown sugar and white sugar and cream it with the butter for 5-6 min, scrape the side of the bowl as needed.

3. Add eggs one by one and beat well.

4. Add vanilla extract and orange extract, beat well. You can add the alcohol (if using) at this stage.

5. Add the dry ingredients and fold in gently. Add the tutti frutti and fold.

6. Pour the batter in the prepared pan, bake in the middle rack of the oven for 45 min or till a toothpick inserted at the center comes out clean.

7. Carefully take out the cake from the pan. Let the cake cool down on a wire rack for 4-5 hrs. You can slice and serve it. To give it the flavor of alcohol, Bake the cake at least 2-3 days prior the party, after the cake cools down, brush the cake from all sides with brandy or rum, cover with a plastic wrap and store it in the refrigerator. Brush the cake with alcohol in between 2-3 times.
